Lychee Berry and Chicken Recipe

Start cooking by drain lychee berries, reserving cup juice and refrigerating remaining juice for another use. Set lychees aside. Mix 1/4 cup lychee juice, sesame seeds, honey, and poultry seasoning in a smalt bowl. Lightly coat rack and broiler pan with vegetable cooking spray.

Place chicken on prepared broiler rack and brush it with lychee juice mixture. Broil eight inches from heat for 10 minutes, basting often with lychee juice mixture. Turn chicken, baste, and broil an additional 8 minutes or until done. Dip lychees into basting mixture and broil the last 2 minutes. Discard remaining basting mixture. Transfer chicken and lychees to serving platter.

Lychee Champagne Punch Recipe

Combine honey and boiling water, thoroughly dissolving honey. Cool. Combine honey mixture with remaining ingredients except champagne.

Pour into a large container and freeze firm. To serve, partially thaw frozen mixture, place it into punch bowl, and break it into chunks. Add chilled champagne. Stir gently until slushy. Garnish. (more…)

Vanilla ice-cream with lychee berries

Drain lychees and reserve juice. Cut whole lychees into halves and combine with 3 tablespoons of the drained juice. Save remaining juice for other uses. Add the lychees and almond flavoring to the softened ice cream. Mix and refreeze. The taste and texture of this wonderful ice cream served in chilled, stemmed glasses are incomparable and unattainable in a commercial product.  (more…)

Fast Lychee Berry Chocolate Sauce

Drain canned lychees, reserving juice. Cut lychee into halves. Place juice into 2-quart pourable glass measure and microwave at High 2 minutes. Add chocolate morsels and stir. Microwave at Medium High 2 minutes or until chocolate softens. Add lychee halves to chocolate sauce. Stir to mix. This rich sauce is wonderful on angel food cake, vanilla ice cream, and lemon and passion fruit sherbets. (more…)

Tropical Chow Mein Salad with Lychees

Drain lychees and refrigerate the fruit, reserving juice. Open passion fruit, scoop out pulp, and place it with honey, rum, and lychee juice over low heat to loosen seeds Sieve to remove seeds and refrigerate the dressing. Combine all salad ingredients in a large bowl. Pour on chilled dressing and refrigerate at least 2 hours. Garnish salad with noodles before serving. (more…)

Stuffed Lychee Berries Recipe

Cooking:

Blend the cheeses, liquid, and nuts to a creamy consistency.

To stuff lychees: Drain canned lychees, reserving juice for another use. Remove excess liquid from lychees with a paper towel before stuffing. Place approximately 1 tea- spoon of the cheese filling inside each lychee, filling it to the top. Level cheese filling at the top and wipe sides clean of filling. Sprinkle garnish on tops of stuffed lychees. Chill at least 1 hour before serving. (more…)

Lychee benefits and how are they used

Of all tropical fruits, the reputation of the lychee is the most sensuous. The first Chinese fruit culture book, written in 1056, was about the lychee. This fruit has been esteemed and enjoyed in the Orient for over 2,000 years.

Lady Yang Kuei Fei so loved lychee that T’ang Emperor Hsuan Tsung (A.D. 712-756) organized a “pony express” to carry lychee 500 miles on horseback from hot, southern Kwangtung (Guangdong) to the northern court for her. Lychees have been cultivated for thousands of years and. in addition to China, they are also grown in Thailand, the Philippines, Taiwan, India, South Africa, Australia, and several places in the United States. When the first boat brought Chinese contract laborers to the sugar plantations in Hawai’i in 1852, lychee was one of the Oriental fruit trees on board as well as longan, pummelo, and mandarin orange. Lychee tree pests and diseases

Dips, and cool storage are used to reduce disease losses. Sulphur dioxide fumigation has been the main post-harvest handling technology to prevent browning and maintain fruit quality. Fruit exposed to sulphur may appear slightly bleached. Fumigation with SO, has been widely used in South Africa and Israel, and experimentally in China and Thailand. However, its continued use may be limited because of concerns about residues, taint and bleaching of the pericarp, though the colour gradually returned after removal of the pads. (more…)
